Rio Tacos has a new home in Albuquerque and is targeting a grand opening in April.

“We got a restaurant, and we are going to sell beer, tacos. It’ll be everything I dreamt about for the longest time,” said owner and chef Fernando Rios.

Their new location will be at 4545 Alameda Boulevard NE in Albuquerque.

“This has been a family effort. This is what I love about our business; mainly my kids have been my helpers. I don’t have any employees. My wife helps me. They drive me and give me the willpower to continue to grow,” Rios said.

Rios , a Northern Meadows resident, is grateful for all the support the metropolitan area has given him.

“I was working at Trader Joe’s full time, and on the side I started this job as the ‘Taco Guy,’” Rios said. “We started getting more and more events until we were full every weekend, and eventually I committed to this full time.”

Rio Tacos is a family-owned food truck committed to sharing its passion for tacos and other Mexican foods. They are commonly found in parks and breweries throughout Rio Rancho, Corrales and the West Side area. The exact weekly schedules are posted on their social media accounts.

“I have been here many times, and my favorite thing on the menu is the crusted quesadilla with asada, but when you get it, you got to fold it in half and eat it like a taco … make sure you ask for it extra crunchy,” customer Damon Cranston said. “This place is awesome!”
