Belle’s Urban Deli celebrates grand opening in Corrales

James and Megan Garrigan, owners of Lily & Liam Bistro and Upscale Burgers, celebrated the grand opening of their newest restaurant, Belle’s Urban Deli, Tuesday with a ribbon-cutting ceremony.

The Garrigans, who live in Rio Rancho, know that local restaurants are important to their community. They opened Lily & Liam just prior to the pandemic and saw Upscale Burgers grow from a ghost kitchen in the bistro to a brick-and-mortar in Cottonwood Mall in 2021. They soft-launched Upscale Rio in May at the former Uncle T’s sandwich shop behind Hot Tamales and officially opened it in July.

“We’re so excited to see business owners like yourselves continue to grow your business and expand and continue to grow, not only the operation and revenue, to grow the jobs,” Rio Rancho Regional Chamber of Commerce President/CEO Jerry Schalow said. “I look forward to great things again; you guys do such a fabulous piece every time you guys have a new restaurant. I know it’s called Belle’s Urban Deli, but nothing here feels urban. It feels just like a place where you want to come to. It’s a very homely type place, a place where you want to come with friends and family and enjoy.”

Belle’s Urban Deli launched in October at 3650 Corrales Road, Suite G. Tuesday, the Garrigans hosted dozens of friends, family and community leaders to celebrate the grand opening of Belle’s. Belle’s has a cozy dining room and a spacious patio.

“We’re a made-from-scratch deli where we’re doing a lot of pickling and fermenting. All of our breads are from scratch, just like the other restaurants,” James Garrigan said. “You can order deli foods to go, so you can take a slice. I’m super happy to be here. We love the patio. It’s a great spot. We’re looking forward to the springtime.”

Belle’s Urban Deli offers a menu for pickup or dining in, specializing in house-made breads, dressings and desserts along with specialty fermentation and curing. It is open 10 a.m. to 4 p.m. Monday through Saturday with brunch from 8 a.m. to 2 p.m. Sundays.
